Apricot tart with matcha

Summer is just around the corner, and there is no better time to indulge in fresh, fruity, and vibrant flavours. If you're looking for an original recipe that combines the best of seasonal fruit with an exotic and healthy ingredient like matcha, you’ve come to the right place.

We present to you an apricot and matcha tart: easy to make, delicious, and perfect for impressing on any occasion. Follow these 4 simple steps and enjoy a light, flavourful dessert with a unique twist!

Ingredients

  • 1 shortcrust pastry (you can also make it at home)
  • 800 g of apricots
  • 200 g of butter, at room temperature
  • 80 g of erythritol
  • 3 g of Original Matcha
  • 2 eggs
  • 200 g of ground almonds

Instructions

Prepare the ingredients. Grease the tart pan and place the dough. Spread the dough evenly in the pan and press the edges. Remove any excess dough with a sharp knife. Meanwhile, pit the apricots, cut them into quarters, add a small portion of the erythritol, and set aside.

For the filling, beat the butter and the remaining erythritol until fluffy. Add the matcha and eggs, and mix well. Finally, add the ground almonds.

Preheat the oven to 180°C (356°F). Place the filling in the tart pan and spread it evenly.

Arrange the apricot quarters on top of the filling and bake for 45 minutes until golden. Let it cool, and enjoy.
